Not quite in GM, but The Swann Inn in Kettleshulme is exceptional for fish dishes. They also do a decent steak but mainly a fish restaurant

My sister lives right near there and says the same as you

On trip advisor it's rated the second best restaurant in Stockport

Another vote for The Swann too. Been there a few times over the last couple of years. It's excellent and you usually have to book well in advance for busy periods (Sat and Sun) not too bad earlier in the week though. The beer is usually decent too.
