I'll be honest mate, the wife and I tend to avoid town during the festival unless there is something exceptional and specific we want to see. Too busy and too many well meaning loons trying to entertain you badly. We used to to the fringe and the fireworks but over the years it has just got a bit meh. Madame Chandelier's rough guide to the Opera (free but get there early to squeeze into a room that uncomfortably seats 20 but has 30 people in it) - a mad 40 minutes of opera mayhem and a Nessun Dorma singalong.
And for cineastes, the French Institute has "Right in the Eye" - a live trio playing accompaniment to the films of George Melies (he was the old watch repairer in the film Hugo). Fascinating stuff - the effects and the sets were remarkable for the turn of 19th/20th century.
Shakespeare for Breakfast always good (Romeo and Juliet this year - two coffee shops in deadly rivalry....) but Dickens for Dinner meh (and no coffee and croissants).
And Henning Wehn of course.
