Photos - I assume you just plug it in through the USB and use it like a oen drive?
Music - don't think there is an Apple product that would do it? If you plug it into iTunes, depending on your settings, it'll either sunc with what you currently have, or wipe the music completely. No way of uploading your music from the iPod to your computer through iTunes, as far as I'm aware.

Don't you just connect your ipod to your laptop and all your files can be accessed via windows explorer (or Finder) in the itunes library folder?
