Yes, veal, pork and pancetta.
Trad bolognese sauce dealt with here in wiki. Recipe includes tom puree which I agree with but sort of reluctantly allows tomatoes in the text, but not the recipe. It is quite clear that the pasta should be flat.

I tend to follow Carluccio in such matters. He would eschew tomatoes, I'm sure.
Have not eaten in Italy for some time, tho' it is true that there are pesky modernists there who will put the kitchen sink in.
