Is Finsbury Park rammed after the game, need to get to Euston for the 7.30 train back to Preston

There are load of options, probably better going to Highbury and Islington. Arsenal is the one near the ground, they may shut it though for a short while after the game, but it is match by match.

Walking to Euston is doable in that time frame.
