People, and companies, are absolutely sh*t scared of being accused of racism so when it's a minority, whether that be religious or racial minority, they bend over backwards to be accomodating. In their fear at causing offence they push aside the majority. In most workplaces in the UK the majority of staff will be white, and Christian, so therefore they will want to celebrate Christmas (in fact the 'Christian' element of that isn't even a necessity anymore, people associated Christmas with presents and bank holidays not with Christianity).
Positive discrimination is, in my opinion, just as bad as any other kind of discrimination, if people aren't being treated equally then someone is being discriminated against, it should be irrelevant whether the person being discriminated against is white or black, Christian or Jew, male or female, disabled or able bodied, it's still discrimination and shouldn't be allowed, by law.
One of the things that really bugs me is that a disabled person when applying for a job is GUARANTEED an interview BY LAW if they meet the minimum standard required. An able bodied person can meet, and indeed exceed, this standard yet receive no interview because there are other candidates deemed to be 'better suited'. How exactly is this fair to ALL? Everyone should be assessed on the same set or criteria and if you're good enough you get an interview, and if you're not then you don't. Simple.
As for the Christmas Holiday rule, Supermarkets are obviously going to be busy over Christmas so the fact many, or most, staff can't have time off should be expected. I can see the standpoint that ALL staff should be expected to wrok rather than "All staff apart from people wanting to head to India/Pakistan/wherever to see family" btu that won't mean you get to have time off, just that they don't. I work for an IS company yet there has to be a 'skeleton staff' in still working on projects over Christmas, this means I may still have to be in for a day or two between Christmas and New Year, and I have NO CONTACT whatsoever with the general public.
