Beautiful towns

Some nice towns in the Peak District, and not to long a drive from Manchester area, Buxton ( stock up on the spring water for free!), Hathersage, Bakewell ( home of the Tart!)
In the summer the Peak can be beautiful ( and bleak in the winter!)
Don't forget Chatsworth House for all you Downton Abbey-ites! If you have kids, they have a petting zoo, and an adventure playground (if you don't fancy dragging moaning kids around), with enough claiming, sliding, zip wiring, to tire them out.

We went to Cornwall about 5 years ago and stayed in an Eco cottage in Mawgan Porth, the place was stunning, 2 minute drive and you were at the beach, the Jamie Oliver 15 resteraunt was nearby, good food, great views.
Padstow isn't bad either, and while down there, a trip to the Eden Centre was well worth it.
Used to camp at the Camping Club site at St. Mawgan. Great place, but an early morning "alarm call" at 5am with the first Nimrod of the day going out at 50 feet on the milk run didn't help.

As for Padstow, a great little chippy in the centre, long before Rick Stein became a "celebrity chef" and spoiled it. Also found Mevagissey to be a great place to visit.

Kelso, Scottish Borders, in fact anywhere in North Northumberland or Scottish Borders because the crowds haven't found it yet.

Did the races there a couple of times with work. Took Mrs Stony with me so she could have a wander around and have a few bets. We saw some spotty young lordling dressed in full tweeds. The twat was even wearing a dearstalker and carrying a shooting stick. He couldn't have been more than 18 or so and he looked like he'd stepped out of a time machine from the 1800's.
