much maligned and undervalued I would like to take this opportunity to champion that most regal of vegtables the Cauliflower

Last night I prepered one as follows (sometimes referred to as Cauliflower Chesse )

Par boil the cauliflower in some salted water for a few minutes, meanwhile melt some butter in a pan. Stir a few tablespoons of flour into the butter to create a thick roux. Add some milk and bring to the boil whilst whisking continously. Add grated cheddar, mozerrella and parmesan continue whisking. Crumble in some gorgonzola or Danish Blue season to taste. Place the Cauliflower in a tray and cover with the sauce, sprinkle a little grated cheese on top. Place in a pre heated oven at 180 for half an hour til golden brown.

Delicious!
 
I love me some Aloo Ghobi, the indian dish with cauliflower and potatoes, extra spicy.
