Has anybody got a great curry sauce recipe?

My favourite curry recipe is for one called Gang Hung Lay from Northern Thailand.

It's unusual for a Thai curry as it uses no coconut milk. The other thing is that it is based on pork belly and pork ribs, so nothing like you you get from the usual Bangladeshi run UK Indian curry house (not that there's anything wrong with those, but they can be a bit routine).

Here's the recipe I use for Gang Hung Lay, I strongly recommend as it is marvellous...

That looks great, a few ingredients I don't have, I will get them and cook it. Not for me with the pork belly, as I gave up meat two years ago, but my sons would love it. I might try the same sauce with large jumbo prawns though. Cheers for posting it.
 
That's my problem. Glasgow has some brilliant restaurants and I was spoiled. Living on the east coast now and the drop in quality is worse than my teams this year. I had a look at the national dish of Chad and on reflection, being deemed an undesirable and refused a visa is probably a blessing.
Try Itihaas in Dalkeith mate. Award winning.
