How do you like your steak?

Along the lines of my earlier post on the thread, do you have a very good system for doing the garlic?
We grow the garlic, pick the scapes about a month before pulled the bulbs, I don’t do the initial sear in the butter, prefer ghee for that. Use the garlic butter for flavor
 
Seared both sides on a red hot griddle, then in a hot oven for 5 mins with garlic butter.
Rest for 5 and scoff, with homemade chips, and maybe a peppercorn sauce made with cream and mushrooms.
Should be pink in the middle, almost charred on the outside.
Nice glass of red to accompany.
Vegetarians, bloody weirdos.
