I prefer to eat any from bleu to medium rare, I don't mind it raw either
Why is rare called english on the photo?
Using the term English is daft because we are usually the one nation that spoils a steak by insisting on it being well done. Europeans love blood, we hate it. I love steak tartar all my mates think I'm weird.Uncooked side of rare so English which to be honest I'd never heard the term.
The exception is a Ribeye which needs a bit more to melt the fat.
