How do you like your steak?

Medium rare.

Get a nice marbled fillet steak, have it out of the fridge and it’s packaging for half an hour until it settles to something like room temperature (depending on how cold your fridge is or how long it’s been in there, you might need 45mins)
Heat up a proper iron griddle pan until it’s smoking
Rub the steak with oil and salt and pepper then put it in the hot pan
Put a bit of butter on top of the fillet
3 minutes
Turn it over
Put another bit of butter on top of the fillet
3 minutes
Done

I have it with asparagus and sweet potato mash.

No sauce needed.

Only thing is, it’s my number one cause of gout! Have to make sure I’ve been eating plenty of cherries in the lead up to eating it.
 
Anybody who doesn’t have med/rare has never truly enjoyed a steak.
Used to eat steak well done. 30 plus years ago in france chef served me an inedible lump of charcoal. Next day mates persuaded me to go medium rare. Now always that or rare
