A little bit off topic, but has anyone tried bison and what is it like ?

Rare. But very well done on the outside. So thrown on a very hot, smoking pan.

Marinaded with salt, pepper and garlic

I had some at a bison farm in the South of the Czech Republic last year. It was very nice indeed.

You’ll find a lot of farmed bison in the stores ( at least here) but I’ve been lucky enough to eat quite a bit of wild bison from Wyoming that friends have hunted. One was taken down by a woman I know with a compound bow. Hate to think what the field dressing would be like
