Passing sideways and backwards allows the attacking players to get into their shape ready for the next pattern of play
It also allows the defensive team to get back into shape which is, in a nutshell, exactly why Gundogan is so destructive to us and why our stats are comparatively appalling with him in the team playing as anything other than a single holding midfielder.
How Pep can't see it, I'll never know.
