I just use a freezer bag, let the stock cool, put in bag and cut a small hole in the corner, decant until you get close to the fat layer.

The enamel in mine has cracked and flaked off - probably due to getting too hot. All of the pan lid handles are chipped - dont know if thats my fault of they're just getting on a bit - had them 15 years. Expensive to get repaired or replaced though.

And the bigger pans are bloody heavy when full - the ex genuinely couldnt lift the biggest one!

You have to get used to the heat retention - I heat the pan turn off the gas and cook scrambled eggs as Im walking round the kitchen sorting toast, tea etc. Over cooked so many things at first = turned gas off but the pans stay hot for ages afterwards so keep cooking.

Great for keeping things warm though. Same goes for the stoneware - ideal oven to table stuff, just don't expect it to be cool enough to pick up after 5 minutes like your pyrex dish is!

The frying pans are great too - the g/f has some cheap crappy ones and you get hot spots where the heat hits the pan base - the Le Crueset spreads it evenly.

Just order the stainless steel set of 3 pans, the 2 frying pan set and the deep casserole thingy. Will let you know how I get on.

Sorry paphos global knives are bloody brilliant!

Best thing ive bought this year is a fridge with ice maker and connected directly to the water mains for endless supply of chilled water. Lifesaver in a hot country.
I'm not saying Global are crap, they do a good job. I'm saying there are better knives than global. Google Honyaki and you'll see why. If you've never used such knives you will never know. It's like driving a porsche for the first time, realising it's shit hot, until you then get in a lamborghini.

Are the pans non-stick?
Not sure I'd get anything that wasn't nonstick these days - not with the memory I've got, I'm always catching stuff and having a reall ballache of a time getting the burnt stuff off!!

Even so you'll notice a difference and mock anyone's cheap and nasty pans if you cook at their house ;-)

Saucepans no but the frying pans are.
 
Anysharp knife sharpener.

Immense piece of kit.
£8 in asda and will make your knives like razors in a couple of strokes through the device.

Much recommended
 
Anyone who likes to keep their knives pretty sharp should get one of these.

Had mine for 2 years now and it does the job. Not a Gimmick at all.
