Olives

I used to think they were absolutely vile.
Then one evening in Krakow 10 years ago I was leathered and in need of food and our next drink came with olives, so I ate them. Either that or potentially throw up because of drinking on an empty stomach.
From that night on, I've loved them. They're right at the very top of my favourite things to eat and I've probably eaten thousands of them by now.
 
Ive liked them from being about 17, wasnt something I ever had as a nipper. Didn't know what I thought about them at first but soon grew to love them.
 
Tomato salad for a sunny day:
Mixed mini tomatoes, sliced in half.
Whole black olives.
Capers
A little red onion.
Feta, crumbled on top.
A little sea salt, black pepper, freshly ground.
Lashings of virgin olive oil.
Crusty bread.
Cold beer or white wine.
Eat outside. Perfect.
 
Always buy whole olives. Stoning loses the flavour. If you want you can stone them yourself just before eating. Old fashioned French garlic crushers have a spike and a cup for the purpose.
 
Prefer the shrivelled up black ones, stones in with a bit of the twiggy stork on making them easier to pick up. I think they must be aged longer, the intensity of their taste is better imo. Opposite for anchovies though, fresh anchovy is far better than the salty cat food thrown atop a pizza.
