Pickling fish

I love pickled fish and just beginning starting to make my own batch.

Have some Mackerel pickling in vinegar with chillies, lemon, salt and oil.

Any tips so that these taste great as I have heard that if done wrong they can turn to mush.

I don't want to end up with food poisoning so any advice appreciated.

Best tasting fish in the sea, must be really fresh though.Shiney,firm skin, plump eyes, deep red gills.If you can get to the coast buy them off the fishermen of day boats as opposed to the big deep water ones.

These were line caught on Sunday so couldn't have been any fresher ;)

Usually cook them but wanted to try something different and didn't want to waste or freeze them.
I think fish tend to spoil when they are put in the freezerl
