They block any transmission through HDMI yes.
I believe, but could be incorrect, that the software that Sky Go use won't work with Google Chrome and therefore Chromecast, but you can get round it by 'casting desktop' from Chrome to Chromecast. I don't think hdmi is blocked but can't remember for certain since it's a while since I had Sky Go.

I think sky go still has a PS4 app. Be worth having a PS4 for gaming on the big screen as well.
 
I had sky go on my xbox one and was able to connect my projector to the xbox with a hdmi cable and it worked fine.
Could be worth getting a second hand xbox one.
 
As others have said, sky won't allow you to cast to another device. I don't think "Magic Eye" works anymore with Sky Q boxes.

I think you have 3 (legal) options.

1. Sky Q mini box.
2. Put your sky box in the garage, dont have sky on your normal TV
3. Run a hdmi from your sky box to the garage. I know you can get at least 10m cables, probably more with a detailed look. You would also need a hdmi splitter - I don't think sky would block that, but you'd have to watch the same channel on both and only be able to control it from wherever your sky box is.
 
I use a FireStick with my projector, just plug it into the HDMI socket and off you go.
