You fucking star, was gonna start this thread the other night but was to pissed so it would have fallen flat on its arse.
I have a weber 57cm kettle, you have that fucking beast that i aspire to own next summer.
I looked at pellet smokers but i find them a bit to involved with technology, that is to say i like the rawness of a proper bbq, fire and red meat etc etc.
The cost was a bit ouchy also.
Personally next summer i want your badass weber or mine again but with the attached trolley and lid holder.
I am a bit of a weber fanboi tbh mate, i have the weber scraper and chimney starter, fire lighters and every wood smoking chip they sell and my briquettes are weber, even my fucking drip trays are official weber ones XD
You know me bud i will try and cook anything that at one point in time had a face.
I lived in Austin and still maintain a house there and will move back one day.
I learned about proper bbq in the USA, rudy's was down the road, green mesquite, salt lick not to far away.
Austinblue will know the score with those places.
Did my first bbq leg of lamb the other day, i was apprehensive about it being a good meat for bbq.
I need not have worried, it was divine.
Got a load of chicken legs to do later, just direct heat with a basic rub for those, no special treatment.
Got a load of pics on my phone, will get some posted during the spurs match.
My ultimate goal is to do a brisket as good as the salt lick, this is the best bbq in the world bar none imo and i have eaten it in plenty of top bbq joints.
I can get it close but not close enough yet.

A risky dish if you do not have a large grill area for indirect cooking possibly ?
