Mate, my new BBQ has cast iron grills instead of chrome. How do I stop meat sticking to them?

Mines cast iron Ronnie , i just rub with oil before hand and make sure the grill is nice and hot before you put any meat on , after a while the grill will be nice and seasoned , dont wash the grill with soapy water use a wire brush .

Spray the meat with olive oil, and/or have the grill effing hot.
Only move the meat when it wants to, if it is still stuck leave it another 30sec, it will be fine.

They sound similar to mine modge, price seems decent also.

I can only recommend big k lumpwood and weber briquettes pride as they are all i buy.
Pricey but worth it, stuff at petty stations are shite.

B000WEOQV8</a>, just place some kindling in the middle and build briquettes around it, light it from below and you will get the desired effect.
For proper bbq bud you really need a sealed unit as otherwise only direct cooking is possible in reality.
Sear your meat then wrap in foil and put just to the side of the area receiving direct heat, keep well rotated and in 30min or so you will have decent food.

I have got a brick built one in my Garden with a tray for the coals then a grill and heating rack above.

I really want to get into it this summer as i love being out in the garden, but i never know how to set up the coals and light it correctly etc?

Sounds like you have just have a grill to me mate. Bbq is indirect cooking, coals one side, meat t'other which is then covered. If you could cover it somehow to keep the heat in, that would be a start.

For grilling direct, mesquite is your best answer. Gives a nice flavour of smoke. Lighting up your charcoal should be done in a chimney with newspaper lit underneath to get it going. If you manage to get a cheap bbq for indirect cooking and need to smoke/slow cook for a 10 to 12 hour cook you have to use the minion method which will give you upto 15 hours cooking time.

Smoke your own spices on the bbq with whatever wood you want. Put your spices in a flat tray and whack them next to your meat on your next 'low and slow'. It's better if you don't use a water tray, but if you do, the spices will stick together a little. Not to worry as you can dry them out in the oven on a low setting. Great for your own smoked paprika.

I am gonna try that, what is the best wood for smoking paprika paphos ?

I am gonna try that, what is the best wood for smoking paprika paphos ?

Hickory or Pecan but you could use wood to smoke the spices for whatever meat you're cooking. Citrus for chicken oak for ham. etc..
 
Good afternoon bbq people,

Investing in a new bbq this year and quite like the idea of smoking as well as grilling.
I'm torn between these two at the moment:

Ive read up a bit on the modifications like heat proof sealant when assembling and making a fire box for the coals, seem to be more needs doing on the hondo tho.

One thing I cant find an that is what its like to grill on either of these, anyone had any experience of this? I'm not quite ready to give up flipping burgers just yet.

Also I've been looking for wood, cant seem to find any proper pieces, is it all chip/chunks?? how much of this do you got through during a 4 hr smoke??
