Im a bit late to this thread
I got these ribs from Axons in Didsbury,the butcher called them king ribs,but they are just undressed spare ribs
They were not cheap,but "you get what you pay for"
I have cut off the top layer of fat and muscle so now have 3 meat and 3 rib sheets

The dry rub is just
Brown Sugar
Paprika
Cumin
Garam Masala
Garlic and Onion Powder
Cinnamon
Salt and Black Pepper

Slow cooked on my homemade ugly smoker/grill..
We are not having them until the bank holiday,so I will update with a cooked photo then

How do you do that chicken mate? It looks great.

Get a chicken breast and stab through the top of the breast, to the end, being careful not to go through. Cut a finger length of your favourite cheese and and force it into the hole you made and add garlic or chilli or pepperoni.(MMM baby)

Next overlap 4 or 5 strips of streaky bacon vertically to cover the length of the chicken and 1 slice in the middle horizontally across the other strips. Place you chicken on the bacon and fold over the horizontal piece of bacon to cover the hole where the cheese is. Wrap the other strips and fold under the breast.

Mix to taste in a foil tin honey, mustard and soy and use this to glaze the chicken. Cook for an hour or so on a low and slow and re-apply the glaze every 15 mins during cooking.

Sounds fucking delicous mate. I might try that tonight using hot dogs instead of chicken and fuck the other ingredients off as I just picked up 12 bottles of kingfisher.

Me and my mates have had a barbethon. Two solid days of eating and boozing and great music in the sunshine, with an interlude last night to see a band in the local boozer. I took the weekend off and couldnt have been luckier with how it turned out.
