If this thread is ever in danger of hitting page two I will bump it. Great idea for recipes and techniques.

Round me mam and dad's we have a few small barbies but usually has a 'massive' one with family and friends when we get our week long summer. I am the commis chef so do all the sauces, preperation, the salads, the spicy rice, the chips, get the BBQ ready, sort out the plates, rub the meats, etc.... my dad (head chef) lights it and stands there tongs in hand whilst I go fetch everything for him to cook.

Seen as I am really in charge of the menu I will be nicking as much info as possible from this thread. One question two who usually come are veggies, any decent recipes for veg?

I usually mow the lawn and rake it into a big pile before mt sisters come over and let them get stuck into that.
Seriously though, portabello mushrooms topped with diced toms, garlic, onion and olive oil is pretty fucking good.

Easy ones are things like stuffed avocado,obergine, they have a tough skin and you can leave them on as a pot to take in the smoke for a fair while.
This stops you having to hammer stuff with oil to keep it artificially moist.
Bok choi grilled with some lemon and olive oil brushed on it is a super simple side dish that i like and i know mates do to.

When is your promotion to pitmaster due matey ?, the old man need to pass the heat proof gloves over sooner or later doesn't he :D

It may be a man thing Bob, as i know women like eating it but like fuck are they interested in the prepping the coals, scrubbing the rack down under heat (never soapy water), slapping the mop on in between glugs of rapidly warming lager.
There are rules that seem to come naturally to us men Bob, such as the cleaning of the grill, i instinctively knew this would be bad to use soap and water like some base instinct hehe.
We were born to bbq
Paphos is already at the top of his game (see how well his lollypop chicken looked) and a pro chef with a real enthusiasm for bbq.
Well your always learning but you get my point, he has some top end gear and years of doing it for people a bit more discerning than your average 4yo hehe.
Me and mcmanus are still learning but we like the whole ethos of it all i think, and ofc boys like fire and starting them more specifically :D

Gonna slap some drumsticks on for now.

Not practical unless you're feeding 500 people but I still want one.

Barbie I went to yesterday was hosted by a Cypriot mate of mine. Big fuckoff fire pit, with three rotisseries over it. Chicken and lamb. Delicious with salad and a little salt and fresh lemon juice.

And it's off to an Indian mate tonight whose wife does a brilliant curry. Happy days:)
