I'll be honest I never use a knife unless eating steak.

Hands for food you can pick up, fried chicken, sticky rice, pizza
Fork for stuff like pasta, jacket spuds or a roast dinner
Knife and spoon for wet dishes like chillis or curry
Spoon for stuff like tata hash.
Chopsticks for khao soi, Suki, ramen etc with them little wide spoons for the soup

I am a peasant though so etitquette is reserved for holding doors open and saying please and thank you
