Winter Soups. Whats your favourite?

Squash soup

1 squash
2 onions
2 red chillies
2 cloves of garlic
1 tsp oil
Salt pepper

Throw all in a pan all chopped up With a litre of veg stock cook for 40 mins then liquidise add more stock if needed add a nob butter stir in and serve.
 
Spicy Parsnip & Spring Onion or French Onion topped with toasted cheese or Leek & Potato or Broccoli & Stilton.

Any time of year: Sweetcorn & Crabmeat or Sweetcorn & Chicken.

I make my own at least once a week, enough for two days.

Tom Yum is on the to-do list.

Pea & ham soup is good and I'm not taking Heinz or Baxter's either where it's easier to put an X on the ball in the spot the ball coupon than spot any ham amongst the peas!

homemade is best and so easy to make your own, plenty of online recipes so no excuses you can't.


I buy a ham hock and boil it an hour in a pan, cut the rind off and cube the meat. Save some of the stock and taste first as it can be salty. I buy a packet of dried peas and steep them overnight in bicarbs. Add a finely diced carrot, a stick of celery and a teaspoon of black pepper and it's bang on pea n' ham soup.

Traditionalists will argue its not strictly pea n' ham soup and they're right. It's just that I find ham and peas too plain.and two dimensional a flavour. Served with crusty bread it's a winner on cold winter evenings.

I also make a nice lamb neck and vegetable broth soup.. And also a old chicken n ' vegetable soup. Made mostly from leftover chicken from a sunday roast. It's amazing how much meat is left on the bird. Boil up the carcass and pick the meat off. Waste not want not as they say...
 
Soups are great, a very easy and quick one is carrot and coriander, just add half a teaspoon of ground coriander and ground cumin to it, just takes it to another level.
