Why do football teams so often play shite in one half and excellent in the other? Formation changes and substitutions does not entirely explain this and neither do tub thumping half time talks.

Change in mentality? If you're alluding to the Reading Arsenal game I think it's pretty evident Reading dropped the tempo and are now struggling to recover it and a goal just before half time has buoyed Arsenal's belief. Had Walcott not scored just before the break no doubting the second half would have been played very differently.
 
it's all about momentum, quite often teams can start a half poorly and finish strongly as well or vise versa.

one decent attack/passing move/ tackle can shift momentum and get a team on the front foot.

top teams have players that can swing this in the blink of an eye, for example our yaya.
 
If your 3/4/5-0 up at half time ... you do not conceed for the first 15 in the second half ... if you can do this you win the game ... you make sure you time waste, fake injury, hoof it, go 10 at the back ...
