I've defended Grealish longer than most, but what would he give us that we're missing currently?

Some act like all of a sudden, he will become a goal scorer or stop that Rashford screamer when he's not playing.
Grealish relieves pressure by advancing the ball up the pitch, holding onto it in advanced positions, making it difficult for the opposition to win it back and winning key fouls. He usually makes good decisions to the benefit of the team both attacking and defending. He draws opponents out of position, leaving space for his teammates who he usually finds successfully.

He's relatively unlikely to grab the headlines with a winning goal or a goal-stopping intervention (although he may well pop up with one or the other from time to time) but he plays a key role in creating the circumstances that we play best in.
