Because bricks don't grow on trees.
P.S, my house (and lot's of other houses) are built with bricks and mortar.

There are several advantages to stick framing a house over bricks and mortar:

Available material
Speed of construction
insulation
ease of utilities ie plumbing, wiring and h vac are very easy to run through studs
Attachment of shelving, cabinets etc is way easier when you have wood studs all through the house
And you can always side it with a masonry product

There are downsides too but I think the above out weigh them

Had a good weekend so far? I painted my dining room this morning but. Bloody ran out of paint with about a meter to go!!! Grrr
