Best start to a film

The World is Not Enough.

Maybe not the very best but it's a fantastic opening chase scene that only gets better with age due to the extensive use of practical effects over CGI.

Gravity. The calm/picturesque space walk above earth turned on it's head by the chaos of the space junk and harshness of space. Thought it was great.

Superbad. The first 20 minutes when they're at school is fucking gold

Inglorious Bastards
Goldeneye (probably quite a lot of Bonds - which was the one where he ski's off a cliff to reveal the Union Jack parachute?)
 
Surprised no one else mentioned Inglorious Basterds yet, the whole glass of Nazi inspection/milk/under the floorboards thing.

I'd give another vote for Dark Knight which I always felt did a great job of getting you into the mood of the film instantly.

Trainspotting & Goodfellas have the classic start in the middle, then go back to the begining which are pretty good.

And Pulp Fiction + the opening credits another good Tarantino one.
It is brilliant - I love how precise the whole (10 minute?) scene is
