Toast one side of the bread, trun it over, spread very thinly with butter. Apply sliced cheese ensuring it goes right to the edges. I'd recommend Lancashire or Cheshire but a cheddar will do. Put very thinly sliced sweet good quality tomatoes on the top, a generous topping of black pepper and grill. If you can move the tomoatoes slightly during cooking then do as the cheese underneath won't melt as quickly.
