When the buffet comes out on boxing day around midday, there is always stilton on there and i purposely dont touch it til about 10 at night. Love it when it gets proper soft and sweaty

in sandwiches with marmite - cheshire
on crackers - shropshire blue
coarsely grated on baking potatoes with sliced garlic - parmesan
to put off the ladies - knob

I think this is an impossible dream - to have only one cheese. I only have ONE a week, but a different one- goats, Parmesan, Oude Gouda, Manchego!
I know what you mean, love them all, vintage cheddar isn't my favourite but I find it the most versatile
 
The Cheese Hamlet in Didsbury has a great selection as most on here probably know <a class="postlink" href="http://www.cheesehamlet.com/default.asp" onclick="window.open(this.href);return false;">http://www.cheesehamlet.com/default.asp</a> , but there is a Cheese Stall on Ashton indoor market that is well worth a shout and very much cheaper although not the selection of the Hamlet.
