Bear in mind that Bayern and BVB apart, the general level of defending in the Bundesliga always looks below PL standards to me.

This is not true. More teams in the Bundesliga play with a egengenpressin philosophy. In the Prem, park the bus is still the order of the day against top teams and school boy tactics against teams of equal talent. I wouldn't consider that better defending in the PL.

However, your point that the quality of club should be taken into consideration is valid. As Sane faced fewer ( if any) park the bus teams last season. On the other hand, Navas, Sterling and DeBryune faced it probably in 65℅ or more of the games they were involved in. Thus, opportunities to take on and or be successful were probably fewer.

That said, once Pep's versionof the Gengenpressing takes hold, we'd recover the ball earlier more often and there should be more one v one opportunities for our attacking options. So I can see Sane's take ons dropping only slightly relative to playing time, and everyone else's increasing accordingly.
