The curry sauce they mostly use is mayflower and you can buy it at b and m in powder.

It's goldfish the 5kg buckets of paste used by the chippy near me, I used to buy it for work too had to go bookers for it though, the stuff is magic.

With Mayflower you need to add some heat to it as it isn't that spicy imho

A lot use Dinaclass although been difficult to get since Covid.

I buy dinaclass at work now I cannot get goldfish, brakes and bidfood sell it, never been out of stock yet, used to in somw supermarkets too, but not swen it for ages as you say.

Not a great fan tbf probably second best flavour wise after goldfish but the little bits of soya in it annoy me, I have to blitz it or chinois it
