If a penalty needs to be scored (i.e. in the sudden death scenario) in a penalty shoot out and the ball comes off the post/crossbar then hits the keeper and goes in, would it count?

Until the ball is dead, or goes out of play, the ball is still active.
so yes!

there's a great video on YouTube where the guy hits the bar, the keeper runs off to celebrate and the ball comes back down and bounces in.
Haha

This rule was changed, it had previously been a single shot on goal which if it went in off the post or bar was a goal, however, if as you say it hit post/bar and then the keeper the ball deemed "dead" as it struck the keeper therefore no goal.

Obviously caused some issues and has now been changed.
