This is where the offside rule is a joke at times.

Both Arsenal players offside there but because they dont touch the ball it stands?

I agree. It happened to us yesterday, a Middlesbrough player was clearly offside and was bearing down on goal Bravo came charging out and kicked it out of play. Result, a throwing up pitch for Middlesbrough when it should have been a free kick for offside to us.

What about the disallowed goal against saints very similar when ageuro attempted to head it

I think if you're in an offside position and make any attempt for that ball then you've influenced the play and it should be offside
