The software they use picks the nearest part of the body to the goal line his shoulder would be behind the toe.

It doesn’t, though.

The VAR (operator) sets the first (closest playable surface on second-to-last defending player’s body to the goal line) and second (closest playable surface on attacking player’s body to the goal line) points on the video frame also chosen by the VAR (operator) which supposedly is the point at which the ball leaves the foot of the player making the last touch prior to the ball going to the afore mentioned attacking player.

The software then determines the vector for the offside line.

So the operators make most of the critical determinations.
