Pass the ball around a bit, start from the back and draw his players in. To keep close control of the ball hold down LT and you can move in whichever way, although be careful on over using it.
You can flick the right analog stick to knock the ball in a direction in which your player will run in to, the best time to use this is when coming up directly against one or two players, or running down the wing to whip a cross in.
Y brings out your keeper.
There's a few more tips, such as if he holds down run quite a lot and he manages to get past you, use the LT trigger again which will send you in to a jockey position when you haven't got the ball (hold LT and RT for a running jockey) in which you can chase his player down without losing sight of the ball, also you can hold down (I think it's B I forget without the controller in front of me) to call over another player to give you a hand, but beware, by moving a player out of his position it creates more space.
If he dribbles out with a player, rush him with one of your own and slide him using x.
Also don't forget through balls are your friend, Y is the through ball button and lb and Y is a lob through ball. Don't be afraid to dribble yourself, by the sounds of it he wont be used to you attempting to dribble past his players so keep close control, don't constantly hold down run and throw him off by cutting in the field or to the wings.

Oh and also when you're getting a cross in there are different ways to do it. You can use the power meter, double tap x for a (what seems to me) a bit more precise cross or triple x for a powerful low drive that will either get you a goal, own goal or a corner 80% of the time.
