I buy Spanish Chorizo every week . Cost about £2.20 for 200g . It's great for a quick snack/lunch .Here's what I did with it yesterday for lunch for me and my son ;
80g Chorizo , chopped into one inch cubes ,
120g Cherry tomatoes , halved ,
Dash of Balsamic vinegar ,
Pinch of ground black pepper ,
Handful of Rocket leaves ,
Quarter of a Watermelon , de-seeded and cubed ,
1 whole garlic clove , peeled ,
3 slices of tiger bread , toasted
In a hot frying pan add the chopped Chorizo . You don't need any kind of oil adding to the pan , the Chorizo will emit oil during cooking .
Fry for a few minutes then add the Cherry tomatoes and fry for a few more minutes .
Meanwhile , toast the bread . When toasted , rub on one side with the garlic clove .
Then add a dash of Balsamic vinegar to the frying pan ( enhances the sweetness of the tomatoes and also adds to the sweetness of the Paprika in the Chorizo ) and add the ground black pepper ( no need for sea salt as salt is used in the curing process of the Chorizo so is normally seasoned enough )
Assemble the toast on a warm plate with a few Rocket leaves on top and add some of the Watermelon .
Add the Chorizo/tomatoes with a slotted spoon on top of the Rocket/Watermelon then drizzle the remaining juices in the frying pan over and around the toast .
The addition of Watermelon might seem a bit 'weird' but I find it cuts through the 'sweetness' of the Chorizo and Balsamic . It's just one of those recipes that seems to work .
Well , my family don't complain eating it .
