As I understand it you need to take the test within 72 hours of your flight so taking the test on Monday for a Friday flight will fall outside that
This is correct. You need to take the test within 72 hours before departure. So if you're flying out Saturday morning, taking it Wednesday afternoon probably best so you get your results Friday. If you're flying out Friday, get the test today. Before booking a test, find out how long they expect it will take to send your results. Usually it's < 48 hours.

Confusing stuff this. Suppose I could book a postal test for the Wednesday, but that'd mean I'd need to take a pre flight test in Portugal to get home?

I think you'll 100% get one. Anyone on the cup scheme probably will. The only way I could see you missing out is if the club put them straight on general sale or to a ballot or something (which I very much doubt will happen).

The club doesn't have time to do a ballot. General sale and the ESL backlash will look like a tea party :)

It doesn’t depend on the time. The return test just has to be taken in the three days before. Gov website gives the example of a flight to UK on Friday can be done Tues, Weds or ThursIt would depend on the time of day of the Thursday test and the Sunday flight. Thursday afternoon / Sunday morning would be fine.
