All that is needed to improve the bars is a structured system and que barriers.
Need to take a leaf out of the kebab and pizza places in town. They have one guy on the til, takes your order, shouts the order, asks for the money, gives you your change and in a few mins you have your food. At Eastlands it would be different because you don't have to wait for anything to be cooked, it is all pre-cooked.
How it should work is really easy, there should be three types of people who work in one bar.
1) Tillers - a designated person who works at each till who takes your order, shouts it out and sorts the money out.
2) Food/Beer getters - Those who get whats shouted and bring it to the counter.
3) Cooks - I'm assuming they are cooked in the bars?
Getting served for something should take no more than 20 seconds.
Barman "What can i get you"
You "Two pints, two cheesburgers and a fanta"
Barman "TWO PINTS, TWO CHEESBURGERS AND A FANTA, that's £11 please mate"
You "There you go"
Barman "£4 change and heres your food, NEXT PLEASE"
Simples! At the moment it's give your order, he goes to get it, gets one thing at a time and then has to wait to use the til.
