Dire Straits - the Alchemy solos on Sultans and Telegraph Road
Alex Lifeson - loads to pick, but Between The Wheels is a special one for me
Iron Maiden - 2 minutes to midnight
Molly Hatchet - about half a dozen on Double Trouble live album
Freebird - (obviously)
Gary Ricrath's on Take It on the Run from the Hi Infidelity album
and should have added Neil Young's Like A Hurricane, a thing of aching beauty

Gary Richrath from REO Speedwagon was one of the most underrated guitarists around. REO's better known from their pop/platinum phase but his licks on Roll With the Changes are pretty great.
 
Roll with the Changes is one of my favourite songs (by anyone).

Once saw Reo play not far from San Francisco.

Mine too, and yes, by anyone. There are maybe 30-40 songs that I've never once gotten tired of and that's one of them.

I saw them in Oakland a billion years ago (had to be the Hi Infidelity tour) and they played it -- maybe the same show!

Saw them at the Manchester Apollo in what must have been about 88, and it is honestly one of the top 5 most enjoyable concerts I've ever been to.
I remember reading afterwards that bass player Bruce Hall had mixed feelings about those UK shows, as he felt fans over here were getting a much better deal having chance to see the band in a 3K seat theatre, instead of the huge arenas US fans had to go to. Of course what he didnt mention is that they did US tours on an almost annual basis whereas over here I think its once a decade - if we are lucky. In fact I think they've only played in Manchester since then once in the last 30 years. Not that I'm bitter or anything, ;-)
 
Not a solo as such but “Layla” must have one of the best intros + riffs in rock history.

“Cherub Rock” by The Smashing Pumpkins has a great guitar solo.
