My take is that Old Arbat is Hard Rock Cafe/Starbucks/Nike Town kinda place. To get your bearings, M. Arbatskaya is at the bottom of Old Arbat Street/Ulitsa and Metro Smolenskaya is at the top of Old Arbat. I went there a few times to find City matches years back and the one I remember is Doolin House, an Irish bar, midway up Arbat on the right and at the top, there's an English styled pub, John Bull, but it's really a Witherspoons clone. On Novy Arbat there are a lot more restaurants/bars/pubs but none too special.
Kuznetsky Most is more preferable, purple and red line. Look for the Vogue Cafe for reference, (a supermodel hangout), and the Kamchatka Bar is there. It's based on the old Soviet 'cafes'. Extremely popular at the moment because the prices reflect the anti-capitalist theme. Coyote Ugly is near there too, with table dancers, etc. Within walking distance is Papa's Place, expat hangout where the staff usually speak English. Also you can walk to Tverskaya Street from there.
On Tverskaya, closer to Red Square/Okhotny Riad, is La Cantina, which usually has live music and a rowdy atmosphere. Around the corner a small Irish bar that is popular called Silver's. The dodgy Nightflight club is also on Tverskaya(close to the first Soviet McDonalds/Pushkin Square) but what happens in Nightflight stays in Nightflight.
Lots of other discos too (Oktober Factory area) but bars stay open late here. Much later than in Britain.

I live on the outskirts of the city so I'm not the best source to ask. I go to 16 Tons for live music and matches, which is near Ulitsa 1905 Goda metro station.
Also Park Kultury = Gorky Park to avoid confusion. Go up on the big bridge (right side from the Kremlin) and after you cross the river, go down the stairs. Voila!
