I’d recommend a Vauxhall Adam. Well built, modern kit, cheap to service even if you use the Vauxhall dealership, easily get high 40s to the gallon, and the 1.2 is lowest insurance group out there (2E) for a car that I’m aware of.
Plenty of vids on YouTube to fix most things too. Saves a few quid.Any small Honda or Toyota
