I use a chip pan for chips, but only have them now & again. I use lard or beef dripping to fry them in. Does make the kitchen smell of frying but you can't get the same taste any other way.
 
I use a deep fat fryer with a timer telling me when the chips are done. I'm too useless to use a chip pan and couldn't even contemplate oven chips. I'd rather go to the takeaway at a push. I almost always wash, peel and cut my own potatoes too.
 
Maybe not a popular method but if you use your own spuds, putting enough oil in an oven tray gets a very decent result. My grandmother uses this method all the time and makes shitloads at once. She has a few oven trays and it takes a couple of hours. But just a suggestion.
 
Im going to give this a go tonight. Only ever remember by nan doing chips like this, she never taught me how and then she went and died. Selfish.
How do i cook chips in a pan without burning my house down? How do i get the oil/fat to the correct temp, or do i just whack it on full blast?

Old fashioned style, I like it, been a while (as I have a fryer should I want home made chips these days) but I always used to heat my pan of oil for a couple of mins, then drop in a bit of peel or off cut chip into the oil. Once that is frying and not sitting on the bottom of the pan, i remove it and whack my chips in to cook, this ensures the oil is not too hot when you add the chips (which is the cause of most pan fires)
