I know they are tested regularly and until such times the testing is 100% accurate, the risk exists. I see you too are just concentrating on the players and not the hundreds of others necessary to put each game on. They have just kicked into touch kids going back to school because they cannot accommodate a 2m safety distance, yet footballers are exempt from this rule.
The others needed will be kept 2 metres apart though and will not go in any areas that the players go. The clubs would not agree to play if there was any serious risk here, do you think they would risk a 100 million pound asset? They just wouldn't.
Playing football in the way they have is the very least of our worries when we have shopping centres reopening, thousands protesting and people generally disregarding the basic advice being given.
