What advantage does it give having a fighter jet shadow a plane with a possible device on board? I cant imagine how awful it would be for the pilot to have to shoot it out of the air is that ever an option?

If you just want to blow up a jet you don't need to tell them there is a device. You just use it.
Claiming there is a device on board is a threat which is then used to do something else. That something else may be worse than blowing up the jet. A fighter escort gives the possibility of choosing the lesser of two evils. The guy on the trigger has a tough job but the guy making the decision has an even tougher one.

To maintain close range visual contact with the aircraft and indeed to destroy the aircraft if it threatens the airport/civilian population on the ground.

Luckily Stockport is expendable so they always had the option should they have needed it.
