I've just booked

21/02
10:40am Manc to Amsterdam
14:20 Amsterdam to Berlin
In Berlin for 15:40

23/02
15:55 Berlin to Copenhagen
17:35 Copenhagen to Manc
In Manc for 18:35

£210

No early get ups and no late arrivals
If you think you are making that connection in Copenhagen, you are in for a shock
There is no way you are getting off one plane, going through passport control and then back through security and then getting to you're gate in Copenhagen Airport in 40 minutes.

Then SAS airways will have to deal with that and put me on the next flight or put me up for the night. Both flights booked direct with them on the same booking

If booked direct with the airline then i'm pretty sure they have to.

As they have sold both flights together including the connection.

That is definitely usually the case
Probably any luggage will be checked through and they will just go through transit channel

It needs checking, they are selling the flights, getting to the gate in time is your responsibility.
It's not like the old days, when you could transfer between flights without the need to go through passport control and security

Do they have to?

Serious question
As per their website;

Connecting flights;

If the delay will make you miss your connecting flight, we will book you on the next available flight free of charge.

Delayed overnight

'If you need accommodation (and you are unable to reasonably return home) we will reimburse you for mid-range overnight accommodations of up to 250 EUR per night and room. We will reimburse the cost of reasonable transport option available to and from the airport and place of accommodation. Make sure to keep the original receipts.'
