Has anybody got a great curry sauce recipe?

According to most authentic recipes this is a no no in making a curry. The onions need to be cooked until soft. This recipe is good, and can use other than goat meat. Hear his take on the onions here too.

Goat meat has a lovely flavour and can be found in many Asian butchers or online, but this curry also works well with lamb. The bones add extra richness to the relatively mild sauce. Serve with steamed rice or chapatis.

People obviously like curries. Why don't you start a thread that you think merits the OT forum?
