Turkish Airlines use the new main airport (Airport code : IST) which is on the European side, about 30 mins to central Istanbul. Pegasus, who also operate from MAN, fly into Istanbul Sabiha Gokcen Airport (Airport code: SAW) which is located on the Asian side and is about an hour by taxi to central Istanbul.
The stadium is on the European side.

my wife just got a new passport yesterday - it took less than a week. They are saying 10 weeks but its clearly bobbins

You make a good point but surely we’ll sell out our allocation given that it’s our first ever CL final? Regardless of the restrictions. Can’t see this going to general sale personally.
 
For those who might be inclined to think outside the box to get there, whilst also wanting to keep costs relatively low given all the possible expenses....

Book a holiday to Turkey, and an internal flight for the final and 1 night in Istanbul (hotels are shockingly cheap in Istanbul if you avoid the chains)

For example....

A nice week in Turkey (price for one adult, could well be cheaper with 2/3 sharing)

Then on Saturday morning hop on this internal flight, returning to your holiday Sunday evening basking in the glow of Champions League glory (hopefully)
