Card only payment isn't illegal. Loads of businesses were doing it pre-covid. I work in town and several coffee shops/bars have been card/contactless only for a while.

I get the argument that refusing cash alienates some people at the bottom of society and for that reason I do think cash should be accepted, but personally I use Apple Pay for 99%+ of purchases. The only time I ever used to carry cash was going to the Etihad before they installed the better card machines / bothered to train the staff.
So people who want to use cash are at the bottom of society

Doubt I'll bother with one when the situation improves and the rules are relaxed. Certainly in the Summer. Wearing a mask did help keep my face much warmer during Winter though!

Or criminals.
All the bars I have an interest in are cash only.
I do helpfully provide cash machines at a reasonable 1.50 withdrawal rate.. :-)

Not sure I’d be able to do it in the U.K. but until it’s made law I have to have a card machine I’ll carry on.

Wahey !!! I've finally found my true station in life, I use cash.

I'll be wearing one in confined spaces for a while. Also sanatising my hands as well. Which you should probably do anyway I suppose!
