Not sure. This stuff is matured in some slate cavern somewhere. Very nice bit of bung.
I bought it from a cheese shop in Conwy. I don't think the place is open anymore, but I'm sure I've seen it in various Welsh delis, one in Criccieth comes to mind near the crystal shop.
It's not rare, I know that much.
